Polyphenols form a huge group of molecules naturally present in plants: more than 8,000 molecules have been identified so far. They are divided into different classes defined according to the structure of their carbon skeleton:
- Phenolic acids
- Flavonoids
- Lignans
- Stilbenes
The flavonoid group itself is comprised of more than 5,000 molecules represented mainly by the flavones, isoflavones, flavonols, flavanones, chalcones/dihydrochalcones, anthocyanins and flavanols.
Polyphenols take part in the defense reactions of plants confronted with various types of stress (pathogens, herbivores, UV radiation etc.) and contribute in particular to the organoleptic quality (color, flavor, bitterness, astringency) of food.
The grape contains large quantities of flavanols, molecules widely documented for their effects on health.
